Ayurveda places Goseva ghee, or clarified butter, at the top of the oily foods list, as it has the healing benefits of butter without impurities (saturated fat, milk solids). Ghee is made by heating unsalted butter until it is clarified into its separate components: lactose (sugar), milk protein, and fat. We follow the scriptures (शास्त्रोक्त) strictly for making of Ayurvedic Ghrita.
However, it is important to note that you will be able to enjoy all the nutritional benefits of desi ghee only if you use pure organic cow ghee. Desi ghee is made from A2 milk & Vedic method(Bilona Method), which according to Ayurvedic, is the best ghee(Maximum benefits). You need not waste your time searching for ghee from grass-fed cows.
